My sweet niece is ONE! And what better way to celebrate than with a fun Pink Lemonade Stand First Birthday party?! Everything was perfect. From the handmade lemonade stand crafted from pallets to the adorable table decorations, to the delicious pink lemonade cupcakes… it was the perfect day celebrating Miss Adelynn Denise.
This sign with Adelynn’s first year stats greeted party goers as well as little note cards for guests to write the birthday girl a note that would be put in a time capsule for her to open on her 18th birthday. Such a fun idea, but what really got me was this picture…
That’s a picture of my dad holding a newborn baby Adelynn. I love this picture. My dad had such a sweet spot for babies. I’m so glad this moment was captured, as these moments where my Dad would just sit and be still were few and far between. He always had to be up and moving, doing something, fiddling with stuff, and to see him savoring a moment with his newest grand baby makes my heart happy. He loved that baby girl and I know if he were still here today she would be so tightly wrapped around his little pinky finger.
My sister, Ashley, was also very good at documenting Adelynn’s first year of growth. She’s a dinky little donut, but she sure isn’t lacking any spunk or sass.
How cute did this lemonade stand turn out? It’s amazing the things you can whip out these days by recycling a few wood pallets. It was the perfect holder for the lemonade which you of course had two choices… pink or lemon.
And being the Cupcake Lady I had to bake up some pink lemonade flavored cupcakes. These cupcakes were so good! Went with plain vanilla for those less adventurous and then for those that like a little pucker with their cupcakes, these pink lemonade cupcakes were so yummy! She kept the decorations simple with Baby’s Breath in mason jars with fresh lemon slices.
And do you think my Mom and sister could make a bigger smash cake? LOL! That cake was bigger than this little peanut, but it didn’t stop her from digging right in!
It’s really a shame that no one loves this baby. It was the perfect day celebrating the blessing and bright spot that she has been in all of our lives during a year that was also filled with such sadness…our little angel baby. But for now… let’s have CAKE!
1 box white cake mix
3/4 cup frozen pink lemonade concentrate
1/2 cup water
1/3 cup vegetable oil
4 egg whites
3 drops of red food coloring
(makes two dozen)
Frosting
3 cups confectioners sugar
1 stick unsalted butter (room temperature)
4 tbsp frozen pink lemonade concentrate
Pinch of salt
Preheat oven to 350 degrees and line your cupcake pan with liners. Combine all of the ingredients and mix with an electric mixer until smooth. Divide the batter evenly, filling the liners about 2/3 full. My cupcakes were done in about 20 minutes. Place your cupcakes in the fridge to cool while you whip up your frosting.
Combine all frosting ingredients in an electric mixer on a low speed until combined
Increase speed to medium-high and beat until frosting is light and to your desired consistency.
